Bacon Pecan Chicken Salad



Need a quick idea for lunches on the go? Whip up a large batch of this chicken salad and eat with crackers, as a wrap, over rice, or just as is during the work week. You can use left over chicken or make a large batch of shredded chicken in the crock-pot like I did!


I love this recipe because you can tweak as you please, if you LOVE grapes but aren't a fan of celery.. well just simply add more grapes! It is so insanely versatile and is truly fool proof!


Ingredients:

  • 6-8 chicken breasts shredded

  • 2 cups red grapes, halved

  • 1/2 stalk of celery, diced

  • 1/2 - 1 cup chopped pecans

  • 1 cup mayo (depending on your preference of taste)

  • 1 tsp salt

  • 1 tsp pepper


Directions:

- Cook the chicken in the crock-pot until it is easily shreds with a fork ( 6-8 hours on low or 4 hours on high with one cup of chicken broth or water)

- Combine all ingredients together in a large bowl and mix.
