Out of all the banana bread recipes out there, who needs another? Well.... ME! I am always looking to tweak my recipe to make it just that much healthier & simple! Plus, every few years I swear I become allergic or intolerant to another food item ha! Banana Bread is a childhood favorite that I will never outgrow no matter how old or how many food allergies I develop ha! This recipe is as easy as can be, one bowl, and you have yourself a perfect loaf of banana bread. Enjoy!!
1 cup Bob's Red Mill All Purpose Baking Flour
1/2 cup Coconut Flour
1/2 cup Brown Sugar
1 teaspoon Ground Cinnamon
1/2 teaspoon Salt
1/2 teaspoon Baking Soda
3 large Mashed Bananas
1/4 cup Coconut Oil, melted
1 large Egg
1 teaspoon Pure Vanilla Extract
1/4 teaspoon xanthan gum
Preheat oven to 325 degrees & spray 4 x 8 inch loaf pan with cooking spray
In a large bowl combine all wet ingredients and mix in all of the dry ingredients until combined.
Pour the batter into the greased pan and cook for 50-60 minutes or until a toothpick inserted into the middle comes out clean.
Let the banana bread cool in the pan for about 10 minutes before removing and slicing.
