Chipotle Caramel Chex Mix



When I first saw this recipe I thought shoot I cant have this as caramel typically has dairy in it! Well.... it is not actual caramel that is used- rather we get to make our own spicy/sweet version of it! I can't rave about this recipe enough as not only does it taste amazing- it makes your kitchen smell like heaven!!!


INGREDIENTS:

  • 1/2 cup Blue Bonnet LIGHT (light is dairy-free, regular is not)

  • 3/4 cup light corn syrup

  • 1 cup brown sugar

  • 1/2 teaspoon chipotle pepper

  • 1/2 teaspoon smoked paprika

  • 4 cups rice Chex cereal

  • 4 cups corn Chex cereal

  • 2 cups Snyder's gluten free pretzels

  • 1 cup peanuts (or honey roasted peanuts- my personal fav)

  • 1/2 cup walnuts

  • 1/2 cup of your choice of: almonds, cashews, or pecans



DIRECTIONS:

  • Place butter, corn syrup, brown sugar, chipotle pepper, and smoked paprika in microwavable dish. Microwave in 30 second increments or until butter is melted and the mixture combines into a caramel heaven!


  • In a large mixing bowl, place the chex cereal, pretzels, and nuts. Pour the melted mixture into the large bowl and stir until every piece is coated!


  • Spread onto two large parchment lined baking sheets and cook at 275.


  • You will bake this for a total of 60 minutes but will need to stir/toss the mix every 15 minutes. Once fully baked, remove from the oven and spread the mixture out flat on parchment covered counter-top. The first 5 minutes is when the mix cools so it is important the mix does not clump.


  • Let cool, then eat up, and have everyone rave about this recipe!!!
