Crock Pot Sweet Potato Taco Chili


OK- so maybe I am jumping the gun here a bit for the start of Fall... But can you blame me? Woke up this morning to a crisp cool air flowing through the windows and fallen leaves on our deck. Bundled up in a blanket, grabbed my cup of coffee, and I started brainstorming some Fall Crock Pot ideas.


At my place fall time means Crock Pot Season! Between the non stop football games (thanks to my boyfriend), long work days, and for those with kids back at school, simple recipes are just the way to go!


This recipe took me maybe 20 minutes tops to get prepared and in the Crock Pot, so if you are looking for the ease of the Crock Pot but are not quite ready to give up the summer taco streak (like me) here is a perfect recipe!


INGREDIENTS:

  • 2-3 Sweet Potatoes (peeled & chopped)

  • 2 1/2 Cups Broth

  • 1 Package of Ground Turkey (Browned)

  • 14 oz. dices Canned Tomatoes

  • 2 Cups of White/ Brown Rice

  • 1 large Green Pepper (chopped)

  • 1 Package of Taco Seasoning

  • 1/4 tsp Chili Powder

  • 1/4 tsp Black Pepper

  • Sea Salt to taste


DIRECTIONS:

  • Chop and peel sweet potatoes. Place in microwavable bowl and cook them in the microwave for 2 min with 2 tbsp water. Add to crock pot.

  • Brown the ground turkey, then add to crock pot.

  • Add in canned tomato, cooked rice, broth, green pepper, & seasonings.

  • Cook on high for 1 hour then on low for another 30 min- 1 hr.


Pour into a bowl, and garnish with cilantro, jalapenos, shredded cheese, and/ or chips! Enjoy!
