Sweet and Spicy Glazed Meatloaf



Meatloaf tends to get a bad rap..Growing up we had meatloaf quite often. Our family made a very plain and simple version of meatloaf and we dipped it in ketchup. If you're anything like me, I will almost eat anything as long as I have a side of ketchup.


It wasn't until I tried a family friends who had a glaze on top that I realized how much potential meatloaf truly had. Ketchup with meatloaf??? Not anymore.


Just like my personality, this meatloaf is sweet and spicy! For any of you who are not a fan of spice, you can simply tweak the recipe to reduce the amount of spice, or even just leave it out completely. I would say enjoy, but there is really no way you won't with this INSANELY flavorful recipe.


Ingredients:


Meatloaf

  • 2 cups gluten free pretzels (crushed)

  • 2 cups corn or honey Chex cereal (crushed)

  • 2 pounds ground beef (93/7 is what I use)

  • 2 eggs

  • 1 cup dairy free milk

  • 1/4 cup brown sugar

  • 1 tsp salt

  • 1 tsp pepper

  • 1/2 tsp smoked paprika

  • 1/2 tsp chipotle chili powder


Glaze:

  • 1 cup gluten free BBQ sauce ( I swear by Sweet Baby Rays)

  • 1/3 cup brown sugar

  • 1/4 tsp smoked paprika

  • 1/4 tsp chipotle chili powder



Directions:

  • Preheat oven to 350

  • Spray the bread pan with olive oil

  • Combine all the meatloaf ingredients in a large bowl

  • Once combined pour into the greased dish and bake for roughly 1 hour


  • For the glaze: After the hour of cooking, take the meatloaf out, mix up the glaze, pour over top, and bake for an additional 10-15 minutes.

  • Remove from the oven, let sit for about 30 minutes, remove from the pan and serve warm!
