Weeknight Sausage Soup

I am currently in the process of moving, and in return, have been heavily relying on grab and go carb loaded meals. When driving back from the city yesterday, while munching on a box of gluten free pretzels, I realized how much my body has been lacking healthy nutrients and veggies (FODMAP friendly of course) the past few weeks.
My sister made this soup for me a few years back, and out of the blue I remembered how insanely easy yet flavorful this soup recipe is! I picked up my cell phone, gave her a call, and had her dig up the recipe for me. This recipe typically includes onions and garlic, yet the sausage is so flavorful that you will not even know the difference if you leave it out of the soup, as I did.
This healthy soup does not lack flavor at all.. it might be one of the most flavorful soups I have made, and it only calls for 4 ingredients!!! If you love spicy food like I do, you can easily add a touch more of spice by simply using a spicy ground sausage.
From start to finish, this soup took me about 15- 20 minutes (prep included). This will definitely be a family favorite!
INGREDIENTS:
4 cups of greens of your choice ( spinach, kale, swiss chard). I use spinach
1 tbsp Olive Oil
1 pound ground sausage ( I use Jimmy Deans)
1/2- 1 tsp salt
1/4 tsp pepper
2 large sweet potatoes peeled and diced
4 cups gluten free chicken broth
2 cups water
( If you need to make this lower sodium, you can do 2 cups chicken broth and 4 cups water. It is still insanely flavorful!)
DIRECTIONS:
In a large pan, pour your olive oil and heat over medium heat until hot.
Add the sausage, salt, and pepper to the pan and saute until browned.
Add the diced sweet potatoes and stir.
Pour in the chicken broth & water, and bring to a boil. Once boiled, reduce heat to simmer.
Add in the chopped greens, and let simmer for an additional 3 minutes until the greens and potatoes are tender.
